Union Dairy, Freeport

Conrad Kaiser turned his first batch of ice cream in 1932. Now (1988) Dean Foods makes the ice cream to Union Dairy specifications.

Began in 1917 selling raw milk, not ice cream.  A surplus of cream lead to making ice cream. Last year the Dairy produced around 90,000 gallons.  At its peak, the dairy produces 200,000 gallons.  It is distributed within 50 miles of Freeport.

Lee Holthaus bought the dairy from Jepson and Kaiser’s sons in 1981 to supplement his small Madison, WI-based ice cream and restaurant program.
